Washoku; Niiza Kurama(新座鞍馬)

Saitama Prefecture is next to Tokyo.
In Saitama Prefecture, vaious vagetables are made.
This time, Tokyo Geisha will introduce Washoku Restaurant ‟Niiza Kurama”(新座鞍馬) which provides Soba.
‟Niiza Kurama” not only make buckwheat but also cultivates buckwheat.
Buckwheat is made by organic cultivation in Niiza City.
‟Niiza Kurama” is not near the station. Many local customers use their car to come to the restaurant.

Deep fried vegetables
It is so-called Vegetables Tenpura.
Saba and deep fried vegetables are good combination.



This is 粗挽き地そば(Arabiki Jisoba).
This is made of 100% backwheat flour.
Generally, there are many soba restaurants which use wheat flour to make soba.
The restaurants which use only back wheat blour are rare.



After eating soba, Japanese people pour sobayu(hot water to boil soba)to the leftover soup.
