Ramen; 纏(matoi)

In Shinbashi, there are many ramen shops.
Ramen is affordable for businessmen, they often have a ramen for lunch or supper.
This time, Tokyo Geisha will introduce a ramen shop ‟matoi”.

 
Before people know it, they almost cross the shop.
‟Matoi” is a small shop,there are few seats at the bar.

にほんいち醤油(Nihonichi soy sauce) is used in 特製烏賊干鶏白湯醤油そば.
The company that makes Nihonichi soy sauce is established in 1787.
It is said that using dried squid is difficult because of having unique flavor, Nihonichi soy sauce is used for the taste better.
 

平子煮干しそば (+長ねぎと煮卵)
‟Ramen with dried fish soup (+ green onion and a boiled egg)”

 
特製烏賊干鶏白湯醤油そば
‟ramen with white soup cooked by chicken and dried squid”

 
The soup cooked by dried squid is rich taste and nice.


Char sir is cooked made of chicken.

The noodles is crunchy.
The noodles and the soup are good combination.
